Chicken Koftas

Someone at work told me that I eat all the time - to that I smile.  I find a lot of new recipes on various blogs, but I find them in magazines, too.  One of my favorite cuisines is Greek and I found a recipe that is close to a chicken gyro - but healthier, and very tasty, too!

Chicken Koftas
1 1/2 lbs. ground chicken (or turkey)
1/2 white onion, diced small
1/3 c. chopped parsley leaves
Greek Seasoning
1 medium size cucumber. diced small
1/2 c. plain Greek yogurt
2 T. olive oil
2 medium tomatoes, sliced
6 pita bread circles
  
Combine the ground chicken, onion, and parsley in a bowl.  Season with Greek seasoning - 1/2 tsp. or so.  Using your hands, shape into oval patties.  Set these aside in the fridge til you are ready to make dinner.  Toss the cucumber with yogurt and salt and pepper - or use a little more Greek seasoning - and chill that, too.
When you are ready to cook, set the cucumber dip, sliced tomatoes, and some chips out, along with plates.  Cook patties in a little olive oil til browned on all sides and cooked through.  Divide patties among pitas bread circles, top with yogurt sauce and tomatoes, and serve.

 

 
Dad and the boys approved of a lighter and fun to eat supper, though they kept referring to it as "Chicken Coughed Up".
