One day last week I was craving comfort in the form of squash casserole. It reminds me of Mom. Now, did she ever make it? No. But I ordered it every time we ate lunch at a certain restaurant in Brenham and I discovered that I LOVE IT.
This recipe was just so-so, which means I will have to find another one to try and that can be challenging since I am losing interest in cooking again*. If you have a recipe you love for this, please send to me!
Monday - Kale salad with (freezer) rotisserie chicken (when I get home from work)
Tuesday - Romaine salad with pickles, cucumber, tuna, red onion, vinaigrette {date night to the movies with myself and I know I will eat popcorn!}
Wednesday - Stuffed Bell Pepper, baked sweet potato, green beans {taking gifts and lunch to Scout}
Thursday - Pumpkin Ravioli with harvest marinara (probably will add chicken or beef), more kale salad {therapy appt. in afternoon, Black Violin concert in p.m.}
Friday - Crab cakes, spinach, sweet potato {Happy Birthday Scout!}
Saturday and Sunday - leftovers for work

I'm not sure what kind of squash casserole you had that you're trying to recreate but I make one that uses pepperidge farm stuffing mix, cream of soup, zucchini/squash that I just love. The stuffing mix is coated in butter so it's crunchy like breadcrumbs but much more flavorful. (https://www.myslicesoflife.com/2016/10/squash-casserole.html)
