I had some wrinkly apples to take care of and thought of this snack cake recipe. Seeing these well-loved handwritten recipe cards is very nostalgic for me.
Easy Apple Cake
2 c. diced apples (I didn't even peel mine)
1 c. sugar
1/3 c. oil
1/2 t. vanilla
1 egg
1 1/2 c. unsifted flour
1 t. EACH baking powder, baking soda, and cinnamon
1/2 c. raisins (optional)
dash of milk if batter seems too stiff
The sugar needs to sit on the apples for about 10 minutes to draw out the juice. But you can get your wet and dry ingredients ready while that happens. (I didn't have raisins to use, so I added in the rest of the chopped dates I buy for my Sunday oatmeal.)
Stir in the wet ingredients first, then add the dry and mix well. Add a splash of milk if you think the batter is too stiff. I just happened to have this finishing sugar I wanted to try - so I sprinkled the top of the cake after I poured it into my dish.
If you spray your glass dish with oil, the cake will easily release.
Bake at 350 for 35-40 minutes.
It doesn't need frosting because its delicious by itself, but I won't come at you for serving it warm with Bluebell vanilla ice cream. Wish Mom were here to share it with me...
Happy Memorial Day. I will be at work. Maybe enjoying a slice of this cake with my lunch!

I love those recipe cards. We have a brownie recipe card that you can't read, but I know the ingredients and the measurements.
ReplyDeleteEnjoy your cake and memories. Looks delicious and reminds me of my Mom’s apple cake btw.
ReplyDeleteApple cake that does not require peeling the apples is already a winner in my book!! And you put dates in your oatmeal? That sounds intereting. And yummy!
ReplyDeleteI bet it was a delicious treat with wonderful memories.
ReplyDeleteLooking good!
ReplyDeleteThat sounds absolutely delicious.
ReplyDeleteIt looks delicious. I can just imagine how wonderful your home must be smelling with this in the oven.
ReplyDeleteThis looks like a much loved recipe and it sounds wonderful. Since I love dates, I know I would prefer the cake with them over raisins. Thank you sharing.
ReplyDeleteMy mouth is watering as I look at your photos. And yes, I love recipes like that too. I have several in my mother's handwriting; they are priceless to me.
ReplyDeleteI have a couple of apples that need using so I intend to make this week. Isn't it a shame that kids are not taught either to write or even read cursive any more? Things like hand written recipes, cards & letters will all be lost to them. ( Or maybe your schools haven't gone the same route as regards to cursive).
ReplyDeleteIt looks delicious, Gina and the fact that it's a sentimental favorite makes it even better!!
ReplyDeleteMade it today. It tastes so good!!
ReplyDeleteAfter my success with Jeanette's Peach Cobbler, you KNOW I have to try her Apple Cake too!
