Last week's Red, White, and Blue Salad, paired with teriyaki marinated and "grilled" chicken was delightful! Full on summer, so no more oven.
Monday - yesterday's dinner of Skillet Meatballs and Beans that I was too tired to cook, carrots
Tuesday - Skillet Tilapia, couscous, sauteed peppers and onion
Wednesday - Stovetop Cheese Enchiladas (making this up as I go along), brussels sprouts
Thursday - (freezer) Taco Spaghetti, salad {morning dentist appt}
Friday - Dill Shrimp Salad on Toast, low salt chips, fresh fruit
Saturday - TBD {Gina to a baby shower}
Sunday - Easiest Italian Chicken (stovetop) {Gina works 7-1]
