Happy Birthday, Sister!

My sister and I are only 14 months apart in age.  My mother once told me that she was "beside herself" to discover that she was pregnant again when her youngest of six children (me)  was only 4 months old.  For my part, a sibling closer to my age was a blessing - the next youngest at our revolving door of a house was 8 and part of a group of three "halfsies" that was getting shuffled around to grandparents and an ex-husband - looooong story there...my parent had several families going at once....anyhoo, sister and I were close growing up.  We've had our differences, but you can't pick and choose your siblings like you can your friends!  We aren't just half or step sisters - we're the real deal.

I want her to have a great birthday...when she told me our mother said no to her request of her Toasted Oatmeal Cookies and the recipe, I thought: I can make you that.  So I did!

Sister's Birthday Toasted Oatmeal Cookies
2 1/2 c. old fashioned oats
1/2 c. finely chopped pecans
1 1/2 c. packed light brown sugar
1 stick unsalted butter
1 t. vanilla
2 eggs
1 c. flour
1 t. baking soda
1/4 t. salt
 Melt the butter in an iron skillet and add oats and pecans.  
Cook on Med-hi heat 8-10 minutes, stirring constantly til lightly browned.  Cool. Combine flour, baking soda, and salt and set aside.  In another bowl, beat the eggs, brown sugar, and vanilla, til light and frothy.  
Combine  with oat mixture and flour mixture; chill 15 minutes.  Preheat oven to 375.  Drop dough by rounded teaspoonfuls on greased cookie sheet and bake 9 minutes.
I plan on getting some Kenya coffee K-cups to go with.  I hope she likes them - I told her I would make her cookies if she promised not to tell our mother...
